Tinker Mackerel or Herring

Test results from current fish stocks (Table 1) show that the "Tinker Mackerel" is a viable replacement for herring and the stable supply provides for a much lower cost.

Caught in Southern California, "Tinker" is the nickname for small Pacific Mackerel with a weight of 100 grams. The low fat content keeps filtration systems from getting fouled with oily residues while at the same time providing a high level of protein and calories in comparison to the herring and sardines. The small "Tinker" also has a low level of ash for better digestibility.
